Cooking light with Everyday Food on the Today Show
Now that the New Year has arrived, many of us are resolute in eating lighter fare and I have just the thing to share with all of you. Yesterday, I made my usual appearance on the Today show and demonstrated some healthy and delicious recipes from the January/February issue of Everyday Food magazine. These included Stir-fried Turkey in Lettuce Wraps, Polenta Wedges with Asparagus and Mushrooms, Salmon with Green Beans and Lemon Zest, and Beef Rolls with Spring Salad. All of these dishes are big on flavor and light on calories. In fact, the meals we prepared were all under 350 calories. Once they’re sauteed in a bit of olive oil, the rolls are sliced and served with mixed greens.
The polenta wedges and asparagus are topped with sauteed mushrooms – only 261 calories per serving!
Ann assisted me with making salmon with green beans, lemon zest, and capers.
When cooked, the turkey mixture is wrapped in tender leaves of bibb lettuce – only 246 calories per wrap!
These thinly sliced pieces of top round are stuffed with pepper jack, sauteed onions and peppers, and secured with toothpicks.
Polenta wedges and asparagus are ready to be broiled.
After about six minutes, this is what they look like.
This recipe is wrapped in parchment and baked – so flavorful and tender.
