“Homeschool with Martha” continues with three great recipes I created for getting us all through this difficult time.
Yesterday, instead of going into New York City for my appearance on NBC’s TODAY Show, I stayed at my Bedford, New York farm and did the LIVE segment through FaceTime. It was a very fun and economical way to broadcast from the safety of my own home. I made a throat soothing Ginger Lemon Brown Sugar Tea, a nutritious green juice, and a delicious and easy-to-make oven-baked potato with lots of topping ideas. I am so glad I am able to shoot straight from my Winter House kitchen. I’ve done so many things here over the years – magazine photoshoots, Facebook LIVE shows and videos, and now LIVE remote broadcasts on the TODAY Show.
Because we are being mindful of the national CDC guidelines to stay at home, we had to work with what I already have. We used portable outdoor work lights covered with parchment paper and secured with binder clips to light our makeshift set. It worked perfectly. My own Apple Airpods allowed me to speak to TODAY Show host Savannah Guthrie and to hear her.
I woke up extra early to gather and style all the necessary items I needed to make two drinks and the potatoes. These eggs are picked every day from my wonderful chickens – my hens have been so productive.
I cut the ingredients for my Ginger Lemon Brown Sugar Tea. Lemons are a good source of vitamin-C – something we should all be taking to boost our immune systems. Ginger is high in gingerol, which contains powerful anti-inflammatory and antioxidant properties. Ginger is also great for treating nausea, sore throats, and high blood pressure.
My tea also includes some brown sugar and four cups of water – I drink it warm and cold. It is so good, and so soothing for even the sorest of throats.
I made my favorite green juice. I have a glass of green juice every morning without fail. It’s a fast and delicious way to consume all those healthy vegetables and fruits. It increases energy, strengthens the immune system and is so good for one’s skin.
I like to add fresh greens, such as celery and cucumber. Celery reduces inflammation, supports digestion, and is rich in vitamins A, C, K, and potassium. Cucumber is high in nutrients, but it’s also very hydrating.
I also put in fruits for great taste and more vitamins and minerals. I am fortunate to have my own greenhouse where I can grow my own citrus. The calamondin was picked right off my tree. Calamondin or Citrus mitis originated in China and was introduced to the United States as an “acid orange” in the 1900s. The edible fruit is small and bold orange, about one-inch in diameter, and resembles a small tangerine. I also sliced a piece of pineapple and some orange with the rind on.
Pineapple is packed with vitamins and minerals and contains disease-fighting antioxidants.

Here I am preparing the sweet potatoes for the segment. I made these as well as oven-baked russet potatoes.
