I am so excited to join Beyond Meat, Inc., a leader in plant-based meat, to introduce its latest meal idea - Beyond Breakfast Sausage - you’ll find it in grocery stores in the coming weeks.
Beyond Breakfast Sausage offers a better-for-you plant-based option using simple ingredients, without GMOs, soy, or gluten. It comes in both classic and spicy flavors. I always try to incorporate healthy, plant-based foods into my diet and am always looking for more delicious choices. Earlier this week, in celebration of Beyond Meat’s newest product innovation, I created two new recipes - Classic Beyond Breakfast Sausage Frittata with Spinach & Sweet Onions, and SpicyBeyond Breakfast Sausage & Grits with Roasted Tomatoes. Whether served as part of a recipe or on its own, Beyond Breakfast Sausage is good and good-for-you because it has 50-percent less total fat, 35-percent less saturated fat and sodium, and 33-percent fewer calories than traditional pork sausage. Plus, it tastes great - I encourage you to try both varieties!

Once everyone arrived, I welcomed the guests to our table and talked about the benefits of eating more plant-based products and less meat.
My first demo was the Beyond Breakfast Sausage Frittata with Spinach and Sweet Onion. Frittata is an egg-based Italian dish similar to an omelet or crustless quiche or scrambled eggs mixed with vegetables, cheese or meat. I love frittata and often make it at home. When I have a lot of eggs, I make a giant one for my outdoor grounds crew to enjoy with their coffee. Here, I am cooking the frozen Beyond Breakfast Sausage patties in a medium skillet over medium-high heat until golden brown. It took about two minutes per side – that’s it.
Then I sliced them into quarters. And, because these patties are so quick and convenient to prepare, it makes a wonderful option for busy mornings.
Next, I combined the cooked spinach, onions, the patties, and the egg mixture into an oven-proof baking dish.

The frittata is baked until golden brown and then plated immediately.
Here it is ready to serve with some fresh greens tossed with oil and vinegar. It makes a wonderful and healthy meal – for breakfast, brunch or any time of day.
The second demo was Beyond Breakfast Sausage with Creamy Grits & Roasted Tomatoes. The grits are cooked in a medium saucepan with four cups of water until all the water is absorbed and the grits are smooth – about five to eight minutes. Next to it, I am cooking the spicy Beyond Breakfast Sausage patties – again over medium heat for two minutes per side.

The grits are then plated with roasted tomatoes.
And then served with the patties and fresh greens. The spicy variety includes some additional spices such as paprika to give it a little more kick.
