More Delicious Menu Options from Martha & Marley Spoon

Last week, while I was away on a business trip, the team at my Bedford, New York farm tested two more delicious Martha & Marley Spoon dinners - Skillet Chicken Meatball Parmesan and Fresh Pappardelle with Greens & Lemony Ricotta. Everything arrives well-packaged and labeled, so there’s absolutely no confusion in the kitchen. Our service sends the kits to the home complete with ingredients to make the meal for two or four.
Our first meal is the Fresh Pappardelle with Greens & Lemony Ricotta. Each box comes with a large recipe card that contains all the instructions.
Pappardelle are large, very broad, flat pasta noodles, similar to wide fettuccine. The name derives from the verb “pappare”, to gobble up. All the ingredients are sourced to local quality purveyors – just choose the dishes the week before, and pick the day of delivery.
The pappardelle pasta sheets are stacked and cut lengthwise into one-inch strips.
The rest of the ingredients are now ready to prep. Here, one large garlic clove is peeled and thinly sliced.
And the kale leaves are stripped from the stems and then coarsely chopped.
A teaspoon of lemon zest and a tablespoon of lemon are prepared and placed to one side.
And then the ricotta is put in a bowl and seasoned. Preparing the ingredients is probably the most time-consuming part of the recipe, but every recipe is developed to take 40-minutes or less to complete.
The only things you have to provide are the olive oil, salt and pepper.
The next step is to sautee the kale in a large skillet over medium heat. The steps are so easy and every recipe card comes with detailed photographs.
The pasta is then cooked in boiling water and stirred often to prevent clumping until it is al-dente.
The pasta is added to the skillet of kale.
And then the spinach is added and cooked another minute until the spinach is wilted.
And that’s it. The pasta and greens are plated in bowls – look how full the plates are. Every portion is enough for even your hungriest of eaters.
A dollop of seasoned ricotta is added to each bowl and then drizzled with olive oil and served with lemon wedges. So easy and so delicious.
The next meal is Skillet Chicken Meatball Parmesan. While the oven is preheated to 450-degrees Fahrenheit, start preparing the other ingredients.
Here is the kit of ingredients – broccoli, cheese, tomato paste, bread and enough chicken sausage to make two meatballs for each person. All the ingredients are used, so nothing gets wasted in the cooking process.
First, the garlic is peeled and chopped. It is then combined with the meat in a medium bowl along with the panko. Panko is a variety of flaky bread crumb used in Japanese cuisine as a crunchy coating for fried foods. Panko is lighter, crispier, and airier than regular breadcrumbs.
The meatballs are formed and placed into a large skillet.
The meatballs are cooked until browned but not cooked through. They are then removed from the skillet and placed to the side.
The tomato paste and garlic are added to the skillet and cooked about one to two minutes. Then, the meatballs are returned to the skillet and cooked another 13-minutes.
The meatballs are turned occasionally while simmering.
Meanwhile, the broccoli is prepared – trimmed and cut into one-inch florets, tossed with olive oil and salt, and then roasted.
The hero roll of bread is split and brushed generously with olive oil and then sprinkled with garlic and grated Parmesan.
Both are roasted until the garlic bread is golden and the broccoli is tender.
Thinly slice the mozzarella and place slices over meatballs and broil until cheese is melted.
