If you're planning to entertain this weekend, why not prepare an all-American fish fry for your family and friends? A fish fry is a meal containing battered or breaded fried fish - served with traditional sides, such as cole slaw, potatoes, and lots of tartar sauce.
Earlier this week, during my appearance on the The Today Show, I showed how to make this delicious summertime feast. All the recipes are from our July/August issue of "Living" - I hope you have it! Our fish fry included crispy fried fillets, dilled cabbage-and-cucumber slaw, spicy tartar sauce, potato and pickled-beet salad, a blondie ice cream cake, and a sparkling cherry limeade.
I always love my time at The Today Show! I hope you enjoy these photos. And, please watch the entire segment - to see it, just click on this highlighted link to The Today Show web site.
Whenever I appear on The Today Show, I get there very early in the morning to go through my segment and to make sure everything I need is on the table.
Here is the crew setting everything up. I am at the other end of the table going through the segment with my special projects producer, Judy Morris.
All the recipes from this segment are from the July/August issue of our magazine, “Living”. I hope you have your copy – it’s available on newsstands now!
The ingredients are all displayed on the table, so everyone can see. These are the ingredients for our fish fry batter and sandwich.
Here I am pre-show, cutting up the fish. This recipe calls for three skinless freshwater fish fillets such as trout, perch or walleye, cut into two-inch pieces.
We’re using the common sole, Dover sole – sometimes it is also called black sole or lemon sole. It is a flatfish that lives on the sandy or muddy seabed of the Northern Atlantic and the Mediterranean Sea.
I also shared a great slaw recipe from the July/August issue of “Living” – this is an excellent slaw you will love.
Here I am on set during the tease to our segment – I am cutting up some cabbage for our dilled cabbage-and-cucumber slaw.
The audience is very enthusiastic – it is always nice to see such an energetic crowd gathered for these Today Show segments.
Here I am with NBC news anchors, Craig Melvin and Hoda Kotb. I am showing them how to make the fish fry batter. The dry ingredients include flour, cornstarch, baking powder and salt. Watch the segment to find out what special ingredient I use next.
The fish is cut into pieces, and then covered in the batter and then dipped into the hot oil until golden brown.
Look how beautiful the fish looks after about three-minutes in the hot oil.
There is also a camera shooting from above. The camera is attached to a jib – a boom device controlled by a cameraman at the other end. Shooting from this angle captures great video of the process.
Craig and Hoda were eager to take the fish to our picnic table where Al Roker, Carson Daly and Savannah Guthrie were seated.
Here is another view of the ingredients for our fish fry sandwich – tomatoes, pickled jalapeños, and spicy tartar sauce. You’ll have to see the segment to find out what ingredient I also add that I learned from Snoop Dogg.
You can find the recipe for this delicious spicy tartar sauce in the same July/August issue of “Living”. It includes mayonnaise, pickled jalapeños and its brine, lemon zest, and pepper.
And here is my sandwich ready to enjoy.
We also served a potato and pickled-beet salad and our dilled-cabbage-and-cucumber slaw.
Plus this sparkling cherry limeade – this drink is so refreshing.
For dessert, we had a blondie ice cream cake. Hoda, Savannah, Craig, Carson and I had such a wonderful time – everyone loved our take on the summer fish fry. I know you will too!
